Pan Seared Orange Roughy with Sweet Blood Orange Olive Oil Sauce Recipe
INGREDIENTS:
-2 – 6 oz. filets of orange roughy skin removed
-1/4 cup of Sonoma Farm Blood Orange Infused extra virgin Olive Oil
-1/4 cup of Sonoma Farm Grape Seed oil
-A sprinkle of Kosher salt
-1/4 cup of honey
-2 tablespoons of soy sauce
-1 1/2 tablespoons of green onions sliced
-1 tablespoon of toasted sesame seeds
TECHNIQUE:
Rinse fish, pat dry and lightly sprinkle with Kosher salt. Whisk blood orange oil, honey and soy sauce together in a small bowl. Heat grape seed oil over medium high heat. Add filets and sauté until fish releases itself easily from the pan flip and add honey, blood orange infused olive oil and soy sauce mixture. Using a spoon ladle the oil mixture over the filets. Cook for about 3 – 5 minutes more to cook fish and slightly reduce sauce. Once fish is cooked through, remove from skillet plate, pour sauce over fish and evenly top with the sesame seeds and sliced green onions.

Orange Roughy is an endangered fish and should not be consumed until it has recovered sufficiently from overfishing. Try this recipe with another fish that is not having an large ecoclogical impact on the environment.
