Robust Caesar Dressing with Garlic Infused Olive Oil Recipe
INGREDIENTS:
-1/4 cup Sonoma Farm Garlic Olive Oil
-2 tablespoons Sonoma Farm Lemon Infused Extra Virgin Olive Oil
-2 anchovy fillets, rinsed and finely chopped
-1 large egg
-1 large egg yolk
-1 dash Worcestershire sauce
INSTRUCTIONS:
Place anchovies on a cutting board and make a paste by dragging the side of a chef’s knife across them at a 15-degree angle about 10 times or until a smooth paste forms. Place in a medium bowl.Whisk whole egg, egg yolk, lemon infused extra virgin olive oil, and Worcestershire into anchovy mixture until smooth. Slowly add in garlic infused extra virgin olive oil, whisking constantly until vinaigrette is well mixed and emulsified. Season with salt and pepper to taste.
