It’s delicious. My problem is that I’m used to it with soybean oil. I specifically found this site to buy Giardinara with Olive oil. I did not have a problem with the oil congealing in the refrigerator (although it does a bit), it is just that the oil is too high quality and heavy to taste like my childhood memories. So I’ll try the soybean oil version next.

Excellent and made with olive oil. Finally a brand that gets it! By the way, I usually don’t refriegrate any giardinera because it’s usually gone in a week or so anyway. If we’re making lots of sandwiches it lasts 30 minutes.
