Halibut in Parchment Paper with Lime Infused Olive Oil and Fresh Cilantro Recipe
Cooking in parchment seals the great flavor of what is inside the package. Cooking with parchment paper is an easy way to create a delicious meal quickly for a weeknight entrée. This version features the perfect combination of cilantro and lime with a fabulous fish. Be careful when opening the package, because hot steam will be released. If you do not have parchment paper, heavy duty foil can be used too. The recipe ingredients reflect a single serving. Increase amounts to accommodate the number of people being served.
Ingredients:
-1 – 6 oz. halibut filet rinsed and patted dry
-1 tablespoon of Sonoma Farm Lime Infused Extra Virgin Olive Oil
-Kosher salt and fresh ground pepper
-1 tablespoon of fresh cilantro minced or more depending on taste
Parchment paper or heavy duty foil
TECHNIQUE:
Cut a piece of parchment paper or foil to about 10 inches in length and 12 inches in width. Place the parchment paper or foil on a baking sheet. Half of the sheet should be flat and the other flat will be the “cover”. Place fish parchment paper. Add lime infused extra virgin olive oil and evenly coat fish. Sprinkle with Kosher salt and fresh ground pepper. Add cilantro and place the remaining limes on top. Fold paper or foil overlapping each other in increments of 1 – 2 inches crimping to seal. Bake in a preheated oven at 400 degrees for about 15 minutes. Plate and carefully open package, because hot steam will be released.
