Sheet Pan Gnocchi with Garlic Olive Oil and Roasted Vegetables

 

Ingredients:

  –16 ounces gnocchi, store bought or homemade

1 red bell pepper, chopped.

1 yellow bell pepper, chopped.

-1 red onion, chopped.

-1-pint cherry tomatoes

¼ cup Sonoma Farm Garlic Olive Oil

-1 ½ teaspoons dried oregano

– ½ teaspoons dried basil

-1 teaspoon kosher salt

 teaspoon red pepper flakes

-Fresh Rosemay Sprig

-Freshly ground black pepper

-Parmesan cheese, to serve

Instructions:

    • Preheat the oven: Heat the oven to 425°F.
    • Mix everything together: On a large sheet pan add all the ingredients. Use your hands to combine everything together. Make sure everything is well coated in the spices and oil.
    • Bake: Place the sheet pan in the oven and bake for 40 minutes, stirring halfway through.
    • Serve: Serve with shaved parmesan cheese, and a drizzle of olive oil.
