Tequila Shrimp with Lime Infused Olive Oil Recipe
Ingredients:
Shrimp:
-1 pound of shrimp, thawed, rinsed and shell removed leaving tails on
-A light sprinkle of Kosher salt
-2 tablespoons of Sonoma Farm Lime Infused Extra Virgin Olive Oil
Sauce:
-2 tablespoons of tequila
-1 teaspoon of Kosher salt
-1 teaspoon of chili paste
-2 tablespoons of honey
Garnish:
-1/4 cup of finely chopped cilantro
-Dash of chili powder
TECHNIQUE:
1.Thaw and rinse all shrimp. Remove all shells and devein if necessary. Set aside.
2. In a small mixing bowl combine all sauce ingredients. Pour into a small skillet over medium high heat and reduce in half. While reducing, heat lime infused olive oil in a large skillet over high heat. Sauté shrimp until pink and they are beginning to brown. Add sauce and continue to sauté until the sauce is almost a glaze and is sticking to shrimp.
3. Quickly remove and place cooked shrimp into a medium size mixing bowl, and quickly toss with the cilantro, chili powder. Place into margarita glass or your choice of serving dish and serve immediately.

Yummy!! Have made this a few times as written. Always very good. Have found adding pinch of Cayenne improves it for me. The mild undercurrent of hot goes nicely with the tequila and other spices.

This recipe was tasty, but I did add cilantro to it. The marinade seemed very light. I would have liked a little more flavor. I made cocktail sauce to go with it to add some more flavor to it. I would make it again, but tweak it a little.
