Fougasse With Bacon and Onions Recipe

Ingredients:
-4 cups flour
-1 tsp salt
-0.3 oz fresh yeast
-0.5 oz Sonoma Farm Basil / Rosemary Olive Oil
-1.25 cups water
-1 onion
-7 oz bacon
-2.5 oz grated cheese
-1 egg
Preparation:
-Preheat your oven to 350°F. Place the salt and then the flour in a kneading machine. Make a hole and put the fresh yeast in it (make sure it does not touch the salt!). Add the olive oil and the water, and knead it
-Let it rest at room temperature during 1 hour.
-Then, spread the batter into a large and thin batter.
-Fry the onion with olive oil and cook
-Add the cooked onions and bacon on the half of the batter letting a border. Fold the batter in half and put the borders together.
-Put your batter on a baking sheet and brush an egg wash on it
-Cut some creases in it. You can make them big so you can see it better after baking it
-Sprinkle with cheese and let it rest during 20 minutes at room temperature
-Bake at 350°F for 20 minutes.
