Asparagus with Feta
Roasted Asparagus Feta and Lemon Olive Oil Recipe
Number of serving: 6 servings

Cook time: 10 minutes

Ingredients:
-1 pound Asparagus, washed and dried
-3 tablespoons Sonoma Farm Lemon Olive Oil
-salt and pepper to taste
-1/2 cup crumbled feta cheese
Preparation:
Preheat oven to 500.
Place the asparagus on a baking sheet covered with aluminum foil.
Drizzle with lemon olive oil, coat well, and add salt and pepper.
Cook the asparagus for about 8 to 10 minutes, or until tender.
Remove the asparagus from the oven and put it on a platter.
Sprinkle with feta cheese.
Serve warm.

This is one of my favorite ways to eat asparagus. This is also just as good cold.

I had been craving asparagus lately. I found this recipe and just had to try it! It was sooooooo good! Even my 15 y.o. son who normally won’t eat asparagus enjoyed it this way and had a generous helping! I think that speaks highly of any recipe when someone is able to enjoy eating something they normally don’t like. I will definitely be making this again.
