Beetroot Salad
Warm Beetroot Garlic Olive Oil Lentil Salad Recipe
Ingredients:
- 1/4 cup Sonoma Farm Garlic Olive Oil
- 1 red onion, chopped
- 2 cans x brown lentils, drained, rinsed
- 1 can beetroot wedges, drained
- 1 tablespoon red wine vinegar
- 3oz baby rocket leaves
- 6oz feta cheese, cut into cubes
Method
- Step 1Heat 1 tablespoon of garlic oil in a frying pan over medium heat. Add onion. Cook for 2 minutes or until softened. Add lentils and beetroot. Cook for 1 minute.
- Step 2Whisk together remaining oil, vinegar, and salt and pepper. Add to lentils. Toss to coat.
- Step 3Combine rocket, feta and lentil mixture in a bowl. Toss gently to combine. Serve.
